Home-made mixed candied peel

A recipe for hot cross buns stated that mixed candied peel was required and I had to make my own as such specialist cake ingredients are not readily available in the supermarkets here besides, everything that is home-made is always more wholesome.
 
I got the recipe from the internet http://www.cooksunited.co.uk/recipes/647981284669279/Mixed-Candied-Peel.html .  2 lemons, 2 oranges and a grapefruit was required for the recipe and 600g of sugar.    The recipe did state that it was time consuming and would take up to three days to prepare.  I fast-tracked the recipe and managed to do it all in eight hours.  It certainly is time-consuming but also immensely satisfying and the kitchen fills with the heady aroma of citrus fruit.
