Lentil and Angel hair pasta with grilled prawns


Home-made lentil and angel hair pasta with grilled prawns.
 
For this recipe you will need the following ingredients:
 
1cup Angel hair pasta, cooked and drained
½ cup Lentils, cooked and drained
1 onion, finely chopped
¼ cup parsley, finely chopped
4 tomates deseeded and chopped into cubes
A dozen black olives, deseeded
Juice of 1 lemon
1 tbsp dried thyme
Olive oil

½ kg prawns cleaned and de-veined
1 tbsp of *Ras El Hanout spice mix blend
Olive oil

 *Ras El Hanout ( راس الحانوت) is a mixture of spices used in North African cooking and may be purchased in shops selling Middle Eastern foods. 


This is an excellent recipe, delicious as well as healthy.  You should start by cooking the angel hair pasta draining it and leaving it to cool before putting it in the fridge for later.  Then cook the lentils which may take about 45mins. or longer to cook.  Then drain the lentils and put them aside as well.

Meanwhile, whilst the lentils are cooking, you can prepare the rest of the ingredients.  Chop the onion and parsley, and deseed the tomatoes and the black olives.  Put all these ingredients aside as well.

Once the lentils are cooked you can begin to assemble this dish.
In a large saucepan add some olive oil and cook the onions then add the cooked lentils, cooked angel hair pasta, the chopped parsley, the deseeded tomatoes and black olives, the juice of one lemon and the tablespoon of dried thyme.  Cook gently.

Then grill the prawns which have been lightly coated with olive oil and Ras El Hanout until they just turn pink.

Serve the meal onto individual plates with the lentil and angel hair mixture first then scatter the grilled prawns on top.
