Pickled red hot chilli peppers

 We spent part of Saturday pickling some red, hot chilli peppers. 

A jar of pickled red, hot chilli peppers.

First, we washed the red chilli peppers.

Then, we blanched them for about 5 minutes in boiling water.

We then put the peppers into a jar together with 1 small chopped white onion, a generous drizzle of olive oil, a couple of cloves of garlic finely chopped together with a pinch of thyme, oregano and some roughly torn fresh basil leaves.  To this mixture we added a boiling brine solution made up half a pint of white vinegar, half a pint of water, 1 tablespoon of sugar and 2 tablespoons of salt.  We sealed the jar whilst the chilli pepper mixture was still hot.  Once the jar cools down you can store it in the refrigerator.   Pickled red, hot chilli peppers are great in sandwiches or as an accompaniment to meat, chicken or vegetarian dishes.  It is always good to have a jar or two in the refrigerator or pantry.  Why buy them from the supermarket when you can make your own?
